The weather and  not finding too many coins have combined to make posting on the blog rather challenging over the past couple of weeks. So with today’s big sporting event, Superbowl XLIV between the Indianapolis Colts and the New Orleans, I thought I’d take this opportunity to take you down into the kitchens at Castle Sidewalker. I’m not much of a cook, and I never really make anything from scratch, but I do consider myself a good ‘combiner’. I’m going to share with you my favorite game time snake.

This is what you will need,  real cooks call it ingredients I believe:

• A bag of Tostitos Scoops
• A jar of Corn and Black Bean Salsa (my favorite is the Desert Pepper brand)
• Shredded Mexican cheese blend (my favorite is Sargento 4 Cheese Mexican)
• Tub of Sour Cream (optional)

Directions:

Get a baking tray and line it with some aluminum foil. Then lay out the scoops. Take the salsa and add a teaspoonful to each scoop. Now cover each scoop with a pinch of the shredded cheese. This should take less than 5 minutes. Then place the baking tray under the broiler for 2-5 minutes depending on how done you want the cheese. Take out from the broiler and place on a serving dish  with a some sour cream on the side.

And voila, you have just made Nachos a la Sidewalker! All in under 10 minutes. This is great snack not just for Superbowl Sunday, but for anytime you need to come up with something quick. Enjoy the game…
