The weather and not finding too many coins have combined to make posting on the blog rather challenging over the past couple of weeks. So with today’s big sporting event, Superbowl XLIV between the Indianapolis Colts and the New Orleans, I thought I’d take this opportunity to take you down into the kitchens at Castle Sidewalker. I’m not much of a cook, and I never really make anything from scratch, but I do consider myself a good ‘combiner’. I’m going to share with you my favorite game time snake.
This is what you will need, real cooks call it ingredients I believe:
- A bag of Tostitos Scoops
- A jar of Corn and Black Bean Salsa (my favorite is the Desert Pepper brand)
- Shredded Mexican cheese blend (my favorite is Sargento 4 Cheese Mexican)
- Tub of Sour Cream (optional)
Directions:
Get a baking tray and line it with some aluminum foil. Then lay out the scoops. Take the salsa and add a teaspoonful to each scoop. Now cover each scoop with a pinch of the shredded cheese. This should take less than 5 minutes. Then place the baking tray under the broiler for 2-5 minutes depending on how done you want the cheese. Take out from the broiler and place on a serving dish with a some sour cream on the side.
And voila, you have just made Nachos a la Sidewalker! All in under 10 minutes. This is great snack not just for Superbowl Sunday, but for anytime you need to come up with something quick. Enjoy the game…

I didn’t know that they made corn and black bean salsa in jars! Where have I been? I’m on it!!! Thank you!
Sounds wonderful. Missed it for the Super Bowl but I’ll have to try it this week.
The treat has long been digested. Time for a new blog perhaps? Or did the outcome of the super bowl destroy you? lol
I came by to visit and see no new posts. I hope all is well with the Sidewalkers.
Sorry that nly today I could reply to your comment on my Mabon post. I keep things really simple on sabbaths so my son can enjoy it in a playful way. It is only as I described in the post. The cornucopy, the greenman mask burning, a light prayer, and a walk on the streets to pay attention on the season’s changes. I always want to make a corn doll, but alas… I’m a coward and can’t make something so complicated.
I hope everything is okay since this post of yours is kinda old. Loved this recipe, I would have to adjust it to find Brazilian ingredients to fit it, but I bet I would love a try!
Kisses from Nydia and little witch.
